Easy Family-Style Chicken Fajitas w/ Mustache Ride

Ingredients:
6 Boneless Skinless Chicken Thighs
2 Tbsp of Mustache Ride
1 Large Sweet Onion
2 Green Bell Peppers
2 Red Bell Peppers
3 Tbsp Cooking Oil
12 Flour Tortillas
2 Avocados
½ Red Onion
½ Lime
Salt to Taste
Sour Cream or Crema (For Serving)
Your Favorite Salsa (For Serving)
Instructions:
On a cutting board, tenderize the chicken with a mallet. Lather up all sides of thighs with one Tbsp of cooking oil. Season with salt and roughly one Tbsp of Mustache Ride per side of all six thighs. Set aside while preparing the veggies
Slice the sweet onion and bell peppers along the grain and set aside
In a large skillet (preferably a cast iron skillet), add one Tbsp of cooking oil and set heat on medium-high. Once pan is hot and oil is shimmering add the chicken thighs. Cook for about 8-10 minutes and flip. Once flipped, try to place a somewhat heavy flat object on top to help with sear and even cooking (we used a smaller flat pot lid). Cook for another 8-10 minutes or until internal temperature reaches 160 degrees fahrenheit (It’s ok if they’re a little undercooked, we’re going to slice and heat up in the skillet again)
Once chicken is cooked, set aside to rest. In the same skillet, add the peppers and onions. Mix around thoroughly to coat the veggies in all the seasoning and oil left over from the chicken. Add a couple pinches of salt and more Mustache Ride as you see fit. Add another Tbsp of cooking oil if needed as well. Cook for about 20 minutes, stirring frequently
While peppers and onions are cooking, add the avocado, red onion, lime juice from half the lime, and a few pinches of salt into a bowl. Smash the avocado and mix all ingredients together to make guacamole. Set aside for serving
Once peppers and onions are tender, slice the chicken thighs against the grain and add into the skillet with the veggies. Mix together thoroughly and pull off of heat
Serve with warm tortillas, sour cream, guacamole, and salsa. ENJOY!
